BUKHARI RICE

Fixings

2 Tablespoons olive oil

1 huge onion, slashed or cut dainty

1 piling measure of ground carrot

1 cinnamon stick and/or ½ teaspoon powdered cinnamon

2 inlet clears out

2 teaspoons cumin

1½ teaspoons cardamom

½ teaspoon dark pepper (or more, to your taste)

½ teaspoon nutmeg

⅛ teaspoon clove

1½ mugs cooked chickpeas

3¼ mugs hot vegetable stock

ocean salt (to taste, relies on upon how salty your vegetable stock is- - I utilized 1 teaspoon)

nuts or dried natural products to embellish

Directions

Wash and deplete the rice 3 times, then cover with warm water and let it douse for no less than 10 minutes or more.

In a vast nonstick pan or pot over medium-high warmth, include the oil and sear the onions with only a squeeze of salt until they get delicate and begin to take a decent cocoa shading on the edges. Include the carrots and sauté for one more moment or two. While that is going on, channel the rice and have it prepared by you.

Presently, to the onion and carrot blend, include the cinnamon stick, cove leaves, cumin, cardamom, dark pepper, nutmeg, and clove and sauté for an additional 30 seconds. The smell will be extremely fragrant. Rapidly include the depleted rice and the chickpeas and mix them around delicately to consolidate every one of the flavors. Pour in the hot vegetable soup, blend, and let it reach boiling point with the top only marginally off the pot. Following 5 minutes, you'll see that the level of stock is presently just underneath the surface of the rice and air pockets are popping through. (On the off chance that this isn't the situation, let it heat up a couple of minutes more.) Cover the pot firmly with the top and put the warmth underneath on the least setting conceivable. Cook undisturbed (no looking or blending!) for 22 minutes.

Following 22 minutes have slipped by, expel the cover and delicately crease and lighten the rice with a spatula or a rice paddle. At that point spread it again and let it sit off the warmth for 5 minutes to complete it off.

NOTES

- Serve embellished with toasted almonds or pine nuts. Raisins and slashed dried apricots additionally make a great option.

Homemade Circus Animal Cookies

Ingredients
    Cookies
  • 2 1/2 cups (353g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (105g) granulated sugar
  • 1/2 cup (60g) powdered sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • Plenty of rainbow nonpareil sprinkles
  • Icing
  • Option 1:
  • 1 1/2 cups (170g) powdered sugar
  • 1/4 tsp vanilla extract
  • 4 Tbsp half and half or 6 Tbsp heavy cream, then more as needed
  • Pink food coloring (I used Wilton Rose)
  • Option 2:
  • 16 oz vanilla candy melts
  • Oil based pink gel food coloring
Directions
  • For the cookies:
  • In a mixing bowl whisk together flour, baking powder and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer cream together butter, granulated sugar and powdered sugar until well combined. Mix in egg, vanilla extract and almond extract. With mixer set on low speed, slowly add in flour mixture and mix until combined. Divide mixture into 2 equal portions, shape each portion into a smooth 6-inch disk. Wrap with plastic wrap and chill 1 1/2 hours, or until firm (you can chill overnight then let rest on counter about 5 minutes if it's too firm to roll). Preheat oven to 350 degrees during last 10 minutes of chilling.
  • Dust a clean work surface with flour then place one disk of dough on floured surface, dust top lightly with flour and roll out to 1/4-inch thickness (leave dough disk chilled that you aren't currently working with). Cut into mini animal shapes (I used these here) then transfer (use an offset spatula to help lift them from surface if needed)to a baking sheet lined with a silicone liner or parchment paper, leaving about 3/4-inch between cookies. Bake in preheated oven about 7 - 11 minutes until set (meanwhile gather scraps of dough, mash and shape into smooth disk again and refrigerate). Remove from oven and cool several minutes on baking sheet, then transfer to a wire rack and cool completely. Repeat with remaining disk of dough.
  • For the icing option 1:
  • In a medium mixing bowl whisk together powdered sugar, vanilla and enough half and half or cream to reach a medium consistency (not runny, not thick). Divide mixture evenly among two bowls, tint one of them with pink coloring and leave the other white. Spread over cookies and immediately sprinkle with sprinkles after frosting each one. Let rest until glaze has set.
  • Icing option 2:
  • Melt candy melts in small batches (about 2 oz at a time so it doesn't harden too quickly) as directed on package. Tint half of the melts with pink coloring. Spread over cookies (or dip and slide some of the excess off on the side of bowl) and immediately sprinkle with sprinkles after frosting each one. Let rest until icing has set.

Chicken Masala Pasta Recipe - Indian Curry Pasta Recipes

Pasta - 1/2 cup (I used macroni pasta variety)
Chicken - 100 gms(1 - 12 bite sized pieces)
Red Chilli powder - 1/4 tsp
Garam Masala powder - 1/4 tsp
Coriander Leaves - 2 tsp finely chopped
Salt - to taste

To roast & grind:

Oil - 1 tsp
Coriander Seeds - 1/2 tbsp
Pepper - 1/2 tsp
Red Chillies - 2
Garlic - 3 cloves
Tomato - 1 roughly chopped
Coconut - 2 tbsp
To temper:

Oil - 1/2 tbsp
Mustard seeds - 1/2 tsp
Curry leaves - few

Method:

  1. Boil water, add pasta along with 1/2 tsp oil, cook until pasta becomes soft yet crunchy enough to bite.Drain water and set the pasta aside.Heat a pan with oil roast the ingredients listed under ' to roast and grind'
  2. Add coconut and tomato after the spices are roasted well, roast the mixture till golden brown and wait till raw smell of tomatoes leave...Switch and cool down. Then transfer it to a mixer.
  3. Grind it to a fine paste with little water.Heat oil in a pan - add items listed under 'to temper' let it splutter. Then add chicken pieces and saute till color changes, then add the masala paste along with red chilli and garam masala powders along with required salt.Saute the masalas for 3mins.
  4. Then add 1/3 cup of water and cook covered till the chicken pieces becomes soft. Then let it boil till the sauce becomes slightly thick.
  5. Now add cooked pasta and toss it well...If it becomes very dry then sprinkle little water and then mix well for the sauce to coat well with the pasta.Garnish with coriander leaves  and switch off.
  6. My Notes:

    • If you want add 1 big onion chopped finely and saute after tempering.
    • This is little spicy so adjust spice level according to your taste buds.
    • Don't make the sauce too thick then it will be very dry and will not coat the pasta. The pasta with the masalas should be juicy and not dry.
    • Cut chicken into small bite sized pieces so that it gets cooked faster and also the masalas easily blend with it.
    • Cooking chicken along with the masalas gives a nice flavour and juiciness to the chicken and chicken flavour to the pasta.
    • If you are cooking chicken separately then use chicken stock to cook pasta.
    • I used macroni pasta variety, you can choose your favourite.
